Chicken Nihari
Ingredients:
Chicken pieces 1 1/2 kgOnions [finely cut] 2 + for tempering
Whole-wheat flour [made into paste with water] 1 cup
Ginger/ garlic paste 3 tsp
Fennel seeds [powdered] 2 tbsp
Dried ginger powder 2 tbsp
Hot spices powder 1 tbsp
Red chilli powder 3 tbsp
Salt to taste
Clarified butter 1 cup + for tempering
Fresh coriander, green chillies [finely cut] for garnishing
Method:
.Heat clarified butter in a pot and fry onions golden.
.Add chicken and cook till colour changes; and fennel and
ginger/ garlic, red chillies, water and salt; cook till
chickenis tender.
.Increase flame and gradually add flour till gravy thickens.
.Add hot spices and leave on dum; heat clarified butter in a
frying pan and fry onions; add to pot.
.Dish out and garnish with green chillies and fresh coriander;
serve.
